Google knows which one to assign credit for results. Only risk is when the keyword is a one word like “Insurance”. That’ll wipe your Campaigns daily spend real quick

I usually start off with phrase then add the exact match keywords that converted in after.

You can do that, but make sure to add a negative keyword list of your competitor brands or different products having similar names etc. It minimizes your losses and as time goes you can add more negative keywords when you get more data.

I have always done it this way, if nothing else to determine search patterns.
They are not competing with one another. Google will choose the best one that matches the search query. It may not be the exact match as it used to be but it can provide valuable insight into how the system thinks.
It’s very probable that in the future, maybe very near future, there won’t be match types anymore. It will be back to essentially broad match which will be treated as phrase and exact.
