Please can someone give insights on this? I did research a bit but the articles & blogs there seem quite outdated.

In my experience, it practically makes no difference. It seems to me Google ignores them for the most part.

Using the pipe key can make your meta title and description more readable and can help search engines understand the different elements on the page. Is it always necessary to use it? Don’t think so. In fact sometimes it prevents you from keeping your title and description concise. You have a limitted number of characters to craft an appealing title, so it may take up too much space.

It has no significance in terms of search engine bots. It may help users scan your title a lot quicker than the rest of the serp therore increasing your CTR which equals to better ranking (if your content hits intent)

You can put whatever you want. Test and see which performs better.

Yoast SEO plugin has already updated about pipe key, that they will not use pipe key and use instead of a hyphen. But most of the ranked sites are still using pipe key and google didn’t remove their ranking from SERP. So you can use pipe key.

    Purely aesthetic preference.

It’s simply a way to divide the SEO part of the title tag from the brand name, saving some pixels more.
