Local website trying to rank internationally
I’m working with some local websites with decent DR. The country I’m in has a small population but is still pretty relevant to the UK nearby so could rank there I imagine. But if I wanted to rank for international keywords, how likely would it be to do that?
More context, these are nonprofit sites I’m trying to grow to generate ad revenue for them. I can try to focus on relevant keywords for their cause etc

I’d say focus on relevant, long-tail keywords and build strong backlinks from international sites and make sure your pages are indexed properly.
