Indexing Keywords After Website Redesign
So, my website is about to go through a redesign, but I'm still doing SEO work on the backend. Should I wait until the redesign is finished to keep adding more content to my site? Or will the keywords that I'm looking to rank for still index properly regardless of the change in design?

It depends on the level of redesign, but generally you should be good to go with adding content during this time.
As long as your redesign does not eliminate the title tag, or add broken schema, or otherwise funkify your pages, the main content is stripped from the boilerplate HTML content before it gets processed for indexing.

I don’t see a reason to stop publishing content while redesign.
If the redesign doesn’t hides parts of the content, I don’t see a problem here
