So I joined the creator fund a few days ago, because I only just hit 10K. However, a few days before this I posted a video that hit about 2M views.
Would I be paid for this video? Or will I only be paid for videos I’ve posted since joining the fund?

You accrue payments daily for views and engagements that happen once you join the fund. So if the video is still trending, you could get some payout from it, but not for any activity that happened prior to you joining.
