E-commerce SEO for a product with colour variations: 1 product with colour variations or separate products for each colour?

I’ve been noticing that it’s easier to rank Shopify collection pages than single product pages.
I’m not sure why that is.
So instead of 1 product with multiple colour and package variations, my idea is to create a category page using the plural version of a keyword.
Then use the singular version for the product pages within that category.
Does anyone have any thoughts/experience with this?

One page with every variation on it and a landing url that automatically selects the variation.
