Adding AMP was never a must.

Its cool and usefull for the creation of the knowledge graph and I would not say it is done in vain. But I would also say that it is not a need-to-have for all your pages.
Just use it, if it works great, if it doesnt, try something else

I think AMP was overhyped, it mainly only applied to news websites, but was never really useful for other sites. And, to answer your question, E.A.T should be a strong focus when building and or improving websites, so as more people become aware of what it is, it will become more prevalent. Schema will keep the same importance as it had a few months ago.
